If is "a" union's office, then it would be 'union's' – not plural.

I'll be at work as we've been told to use an Annual Leave day if we want to be off.

I work every bank holiday. If I want one off I have to take it as leave which I never do as I like the money and bank holidays are pish and just another day to me.
