I went to the Trafford Centre before Xmas and it was full of Irish Coach Trippers who'd come across for the day to take advantage of the Exchange Rate.

Carcasonne is great especially the Old castle area and a nice walk along the river. The area has a good selections of wine. Trains are clean and regular. but there is a good motorway between Toulouse and the Spanish border with some good views. There are some nice little Villages on the coast like Collioure.
