Hotel de la Loge is a sang-et-or favourite. I'd say tell 'em we sent you, but it probably won't achieve anything... Slap bang in the centre, on the cheaper side of average and performs all the functions you'd expect of a hotel.

What is the parking situation like around the stadium? We are stopping in Perpignan, but looking at the map, the walk looks a little bit too far for our 8 year old and we are hiring a car.

Not great. It's a bit of a rough neighbourhood and finding the hire car with all four wheels attached is a bonus every time. Far better to use the parking in the centre of town and bus it up to the ground. Buses go from just by the Castillet and hopefully someone else will be able to remember which number it is (I usually walk it and have the memory of a... of a... Oh, nice pair of shoes. What were we on about again?)
That said, for all it is a rough area and it is a risk to park there, I've found the car intact and unmolested on the few occasions I've done it. So take your choice really.
Ah, we are stopping near the centre of town, but won't be getting there until mid-afternoon, so not sure if I'll have time to find my bearings to get the bus but if anyone could provide me with the number, that'd be great. Other than that, what's the taxi situation like?
Also, what time is kick-off. The Giants website says 18:00, but the tickets say 18:30?

bus outside le castillet fairly regularly, i think its the number 1 bus but could be wrong, or its a 20 -30 minute stroll from the centre.
