The Mildord Track, Routeburn and Kepler will all need to be booked in advance if you plan to stay in the huts or make use of the campsites. Nothing to stop you walking some of them though, granted you won't see much in the Kepler in a day. Queenstown Hill track is a nice easy one you can walk in less than a couple of hours return, with spectacular views from the top. If you want a more challenging day walk then give Ben Lomond a go. Check out
http://www.doc.govt.nz , every walk in every area should be listed on there.
Just the obvious places spring to mind after that; Milford & Doubtful Sound, Tekapo, Mt. Cook village etc. If you've got plenty of time to spare and you want to go right to the bottom then The Catlins are worth a visit. I'd only go there if time allows though. As beautiful as the area is, there are far nicer parts of NZ then there.
Thanks for all that gives us some good ideas to look at. Like the idea of driving to the pub and sleeping in the camper van !!!
